Celebrating Earth, Fire, and Community

A beloved weekly event returns to the gardens of our estate: Festum Terrae is a series of open-air dinners that honour nature’s abundance, elemental fire, and the timeless art of sharing a meal. An invitation to gather with us beneath the stars, surrounded by orchards and herb beds, while our chefs cook over open flames using ancestral techniques reimagined through a contemporary lens.

Tabernae Rusticae: A Feast of the Estate

Everything on offer is grown, raised, or crafted on the estate – from vegetables harvested at peak ripeness to respectfully raised meats, raw-milk cheeses, honey from our hives, kombucha from the Fermentation Lab and estate wines.

The menu invites free exploration, with rustic tasting stalls – Tabernae Rusticae – scattered among the garden rows and a long shared table where freshly grilled dishes, ferments, and surprising pairings await. Fire, flavour, and fermentation come together in a primal celebration of the land and those who care for it: our chefs, farmers, cheesemakers, fermenters, and the entire Borgo team.

A festive tribute to Tuscany’s ancient sagre – where conviviality, music, and the joy of eating under the open sky offer a return to something elemental, shared, and deeply rooted.
